Clover Food Lab Announces First Suburban Location with the Debut of Clover Burlington
Founder & CEO Ayr Muir and His Team Bring Fast Food Driven By Simplicity to the Suburbs
BOSTON (June 2013) – Clover Food Lab, a Boston based company that is reimagining fast food and the way that Americans eat, is proud to announce that they are expanding into the suburbs with the arrival of their third brick and mortar location in Burlington, MA. Founder & CEO Ayr Muir developed Clover to begin a food revolution that bridges the connections between consuming delicious fast food that supports local food systems and is environmentally conscious. Clover now operates as the largest food truck fleet in the country along with two other brick & mortar locations.

Clover was established in 2008 and originated as a food truck near MIT that was meant to serve as a temporary method of menu testing. Together with Corporate Executive Chef Rolando Robledo, who previously worked for The French Laundry and Lespinasse, Ayr Muir quickly built a loyal following of customers whose demand eventually dictated that Clover would operate on both the food truck and brick and mortar platforms. Since then Clover has grown to include 7 food trucks, and has plans for expansion in over 4 new locations throughout the surrounding Boston area in the coming months.
Clover Burlington will be run by Michael Sutton, who was most recently managing all back of the house operations for New York Times lauded restaurant O Ya. Michael Sutton is a Burlington native and is excited to share the expansion of Clover with his hometown community. The Clover food philosophy is driven by simplicity and dedication. Since its inception, the menu at Clover has been made fresh daily from scratch as none of the locations utilize a freezer. Clover purchases more organic food sourced from local purveyors than any other restaurant, resulting in a modest menu that changes many times throughout the day. Clover’s beverage program is unparalleled, with its coffee, tea and house made drink selections curated through the same meticulous detail and development process as their other menu items. Beverages are made daily and change with the availability of ingredients while New England breweries and coffee roasters are visited and methodically tasted before making their way to the Clover menu. All menu items are priced at no more than $7 and include a variety of items for breakfast, lunch and dinner.
Clover Burlington is set to debut during the third week of June and is a 1,500 square foot location designed by Single Speed Design. The space accommodates up to 44 guests at communal tables as well as bar seats. Guests are greeted by glass front active displays featuring the digital menu, alongside Clover employees that take orders and discuss menu items. Additionally, the space will feature a mix of stainless steel elements in the open kitchen, a living plant wall and silver maple countertops. Clover Burlington will be located at 100 Burlington Mall Road in the Burlington Marketplace plaza in Burlington, MA. The Burlington Marketplace plaza is owned by Linear Retail Properties, LLC.
